Fluffy American style pancakes

A WORD FROM THE CHEF

Pancake Tuesday is fast approaching. Treat your loved one with these tasty, fluffy American style pancakes. They are super moist and a real crowd pleaser. The recipe multiplies really well so if you need to feed more than 3-4 people you can easily double the recipe.

INGREDIENTS

Two ripe bananas

Two whole eggs

1tsp vanilla extract

150 grams plain flour

Two teaspoon baking powder

50 grams milk

Fresh berries to garnish

Golden syrup or honey to garnish

METHOD

Add the ripe bananas to a mixing bowl. Mash well with a fork.

Add the eggs and vanilla extract and whisk together.

Add the flour, baking powder and milk and whisk until nearly all the lumps are gone.

Heat up a frying pan on medium heat with a drizzle of vegetable oil.

Once hot, scoop about 1/4 cup of batter onto the frying pan.

Cook for 1-2 minutes until the top begins to bubble and look a little dry.

Carefully flip over and cook on the other side for another 1-2 minutes.

Remove onto a plate and leave in the oven on the lowest heat to keep warm while you continue with the rest of the batter.
