All or Muffin!

INGREDIENTS
(This makes six muffins)
100g plain flour
40g ground almonds
1tsp baking powder
Pinch of salt
60g butter soft
70g caster sugar
One egg
70ml milk
1tsp vanilla
Flaked almonds
METHOD
Preheat your oven to 160c.
In a bowl combine your flour, ground almonds and baking powder add a pinch of salt and mix to combine everything and set aside.
In a separate bowl, add the butter and sugar and cream this together with a wooden spoon until pale and well mixed together then add the egg and vanilla and mix well.
Add half the flour mixture and stir well then add half the milk and mix again and repeat this with the remainder of the flour and milk.
Spoon into a lined muffin tray. I use an ice-cream scoop as this gives even-sized muffins and sprinkle with some almond flakes and bake for 25-30 minutes until golden.
Then sprinkle with some icing sugar and serve with a cup of tea or coffee.
