Traditional Soda Bread and Jam

A WORD FROM THE CHEF
I grew up making their bread with my mum. Now I bake it most weeks for my family. It’s lovely just with butter or your favourite jam or even toasted.
INGREDIENTS
450g plain flour
1tsp bread soda
A pinch of salt
25g butter
1tbsp sugar
400ml buttermilk
METHOD
Preheat your oven to 200c and, in a large bowl, place all your dry ingredients. Then add in your butter and rub this into your dry ingredients with your fingertips until it is well combined.
Then make a well in the centre of the mixture and add your buttermilk. Don’t add it all at once as it may not take the full 300ml to bring it together. I use a knife to bring the mixture together until it forms a dough.
Tip it out on to a floured surface and gently bring it together to a smooth dough. Don’t overwork it once you have a coming together. Place it on a baking tray and flattened it out slightly.
Cut a cross in the top and dust lightly with flour. Place in the oven and bake until golden in colour and it sounds hollow when you tap the underneath of the bread.
Then wrap in a clean tea towel and allow to cool.
