Chef's Delight: Beautiful baked oat muffins
A WORD FROM THE CHEF
My kids are fans of flapjacks so this is a very simple variation on them. The kids love them. They would be are a perfect, healthy option for lunchboxes or snacks. You can change out the blueberries for something else if you’re not a fan.
It takes about 10 minutes to whip up including getting your ingredients ready.
INGREDIENTS
150g rolled oats
1tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
120ml milk
3tbsp honey
1 egg
60g blueberries
METHOD
Mix all your dry ingredients in a bowl then in a separate bowl mixed together your milk, eggs, vanilla and honey and twist this together then pour this over the dry ingredients and stir until well combined finally add in your blueberries then spoon the mixture into a greased muffin tin and bake at 180c for about 25 minutes.
You could also make them in a lined tin and cut into bars after baking if this is easier.
