Dark Chocolate Peanut Oat Bars

A WORD FROM THE CHEF

These Dark Chocolate Peanut Oat Bars are a perfect snack to grab on the go or a healthier treat option. They’re packed full of nutritious and delicious ingredients such as dates, oats, peanut butter, flax seeds and coconut oil. Not to mention they are super simple, requiring no baking and can happily live in your freezer for up to three months.

INGREDIENTS

180 grams chopped dried dates

3tbsp boiling water

75 grams coconut oil melted

1tsp vanilla extract

1tbsp peanut butter

90 grams oats

30 grams ground flax seed

150 grams dark chocolate

15 grams coconut oil

METHOD

In the measuring jug or small bowl, add the chopped dates. Pour over the boiling water and leave for 10 minutes to soften.

When soft, blend until smooth.

Add the melted coconut oil, vanilla and peanut butter and mix until totally combined.

Transfer to a large mixing bowl along with the oats and ground flax seed. Mix well.

Grease and line the loaf tin and fill with the oat mix. Spread evenly to the edges of the tin.

Pop into the freezer for 30 minutes to set.

Melt the dark chocolate with the coconut oil for one minute and then, in 10 second bursts, mixing well between until totally melted.

When the bars are frozen, remove from the freezer and cut into 10 slices.

Place onto the wire rack over a baking tray or paper. Pour the chocolate evenly over the bars, using a spoon to smooth over any uncovered bits.

Leave to set for 10-15 minutes before removing from the wire rack. Store in an airtight container or ziploc bag in the freezer.
