Chef's Delight: Minestrone soup

A WORD FROM THE CHEF
This is a great wholesome soup - comfort food. It takes just 30 minutes to prepare, 45 minutes to cook and will keep you warm all day!
INGREDIENTS
(Serves 6)
A splash of vegetable oil
250g smoked bacon
One large onion, diced
One small red chilli (optional)
Two carrots, peeled & diced
Fou celery stalks, diced
Five cloves garlic
Two medium potatoes. Peeled & diced
1tbsp tomato puree
400g tin chopped tomatoes
1100ml hot water
One vegetable stock cube
One courgette, diced
100g small pasta
1tbsp fresh thyme, chopped
1tbsp fresh rosemary, chopped
Salt & Pepper
To serve
One handful fresh parsley, chopped
100g Parmesan, grated
METHOD
Into a heavy based saucepan, add the oil and chopped bacon and cook until golden.
To this add the chopped onion, carrot, celery, chilli (if using) and garlic and cook for a few minutes.
To this add the potato and tomato puree and stir through.
Dissolve the stock cube in the hot water and add this to the pot along with the tinned tomatoes and fresh herbs.
Bring to a bowl and turn down and simmer for 30 minutes.
After this time, add the diced courgette and pasta and cook for a further 10 minutes or until the pasta is cooked.
Check for seasoning at this point.
To serve, spoon into bowls and top with parmesan and chopped parsley.
