CHEF'S DELIGHT: Garlic prawns

INGREDIENTS

4tbsp oil

Two cloves of garlic, crushed

2tsp chilli powder

1/4 tsp salt

450g prawns

50g diced onion

A knob of butter

METHOD

In a bowl, whisk together the oil, garlic, lime juice, chilli powder and salt.

Add in the prawns and mix so they are well coated.

Place in the fridge for about 10 minutes.

In a pan, heat oil and add finely diced onion and cook until soft.

Add the prawns and cook on one side for one minute, then turn over and cook on the other side for one minute.

Add a knob of butter and stir through the prawns.

Serve immediately with salad or crusty bread.
