Bacon burger with barbecue relish

A WORD FROM THE CHEF

If you are after a tasty fakeaway, that isn't too hard on the waistline, these delicious burgers will hit the spot! This dish takes 35 minutes to prepare and 14 minutes chilling.

INGREDIENTS

(Serves 4)

One bunch spring onions, finely sliced

400g lean beef mince (5% fat or less)

2tsp chopped fresh parsley

2tbsp chopped fresh chives

Four back bacon rashers, visible fat removed

Green salad leaves

Four 60g wholemeal rolls

For the relish

Low-calorie cooking spray

One onion, roughly chopped

1tsp mild chilli powder

225g passata

Three level tbsp sweetener

4tbsp balsamic vinegar

1tbsp Worcestershire sauce

½ tsp mustard powder

METHOD

Place the spring onions in a bowl with the beef, parsley, chives and seasoning. Combine with your hands and shape into four burgers about 10cm in diameter. Cover and chill for 30 minutes.

While the burgers are chilling, make the relish: Spray a non-stick saucepan with the low-calorie cooking spray and place over a high heat.

Sauté the onion and chilli powder for five minutes until softened. Stir in the remaining ingredients, bring to the boil and simmer for 10 minutes until thickened. Check the seasoning before serving hot or cold.

Place the burgers under a medium/hot grill for six to seven minutes on each side, or until cooked through. Add the bacon for the last five minutes of cooking, to cook through.

Layer salad leaves, a slice of bacon, a burger and some relish in each roll and serve immediately.
