Tuna Nicoise Summer Salad

A WORD FROM THE CHEF

Chunks of tuna, boiled egg and vibrant salad, all drenched in a delicious home-made dressing – this will bring the taste of summer to your home-office lunch! And the best part? It only takes 15 minutes to prepare and is healthy too at only a half a syn per serving on the Extra Easy Slimming World plan.

INGREDIENTS

(Serves four)

200g green beans, trimmed

Two little gem lettuces, leaves separated

100g each of red and yellow cherry tomatoes, halved

One red onion, thinly sliced

Two small cans of tuna in spring water, drained

Four eggs, boiled and halved

For the dressing:

4tbsp fat-free vinaigrette

One level tsp honey

Juice of one lemon

One level tbsp wholegrain mustard

METHOD

Blanch the green beans in a saucepan of lightly salted boiling water for two to three minutes, then drain and refresh under cold running water. Drain and transfer to a large bowl with the lettuce, cherry tomatoes and red onion.

Break the tuna into bite-size pieces and add to the salad ingredients along with the boiled egg halves.

Whisk all the dressing ingredients together and season lightly. Pour the dressing over the salad and toss gently to mix.

Cool, cover and chill until you're ready to eat.

Top Tip: Olives make a delicious addition to this tasty salad (add 1½ syns for every eight olives) or, if you want something more filling, add some pasta.
